Pomelo Salad (Nepalese Style)

Bhogate Sadheko - a delicious Nepalese Pomelo salad which I learnt to make from my Nepali friend. It is easy to make even though it looks like there's lots of ingredients. It packs a great protein punch due to the addition of sesame seeds and Greek yogurt. The nuttiness of sesame, paired with the heat from mustard oil, the creaminess of greek yogurt and the tanginess from citrus fruits are all a flavor bomb and blend together so seamlessly!


I've used grapefruit and blood oranges because it makes this dish so pretty and can be a showstopper salad for your festive table or just a great summer salad for your next BBQ (try something other than the usual potato salad and win praises!)


Ingredients:

Pomelo - 1 large

Grapefruit - 2 large

Oranges or Blood oranges - 5 small/medium

Greek Yogurt - 1 cup (can use regular yogurt)

Salt/Sugar - as per your taste

Roasted sesame powder - 5 tbsp

Mustard Oil - 3 tbsp

Dried red chillies - 2

Fenugreek seeds - 1/2 tsp

Turmeric powder - 1/2 tsp

Chilli powder - 1/2 tsp

Fresh green chillies - 2 (chopped)

Spring Onions - Handful

Coriander leaves & Pomegranate arils for garnish


Method:

Toast sesame seeds lightly and powder it. Peel, deseed and chop citrus fruits into cubes. Add to it the chopped green chillies, spring onion and powdered sesame seeds. Season the yogurt with salt & sugar. Pour this into the fruit mix and toss well. Heat mustard oil to smoking point in a pan, add the dried red chillies and fenugreek seeds. Add turmeric powder and chilli powder, take off the flame immediately and pour over salad. Mix well. Garnish with chopped coriander leaves and pomegranate arils.
