Mango Millets Kesari

My love affair with Millets an ancient Indian grain has grown by leaps and bounds and here I have added my favorite fruit Mango to it and present here a Mango Kesari ♥️




I love Kesari Baat which is a sweet dish from India traditionally made with semolina, ghee water/milk and sugar. It is served during festivals and also as a breakfast item. Fruit Kesari is a newish trend particularly in Karnataka where Pineapple, Mango Kesari etc are very popular. I wanted to eat Kesari baat but not something cloyingly sweet or laden with ghee.

Ingredients:


Millet rava- 1 cup (I powdered a cup of millets)

Mango Purée - 1 cup (I used the Pakistani Sindhri)

Ghee - 3 tbsp Water - 2 cups

Coconut Milk - 1/2 cup

Date syrup - few tbsp (alternate with 1/2 cup sugar)

Cardamom powder - 1/2 tsp

Saffron - few strands

Salt - a pinch

Raisins & Cashews to garnish


Method:


Heat a pan, add ghee and start roasting the Millet Rava. Keep roasting till it develops a nice aroma (around 5 minutes or so). Add 2 cups water and mix well. Keep stirring and cook till the water is absorbed. Next add the coconut milk and cook till absorbed. Now add the mango purée, date syrup or sugar, saffron, salt and cardamom powder. Keep stirring until the liquid is absorbed and a Halwa consistency is reached. Serve hot garnished with cashews and raisins fried in ghee.


Absolutely delicious and a guilt free dessert.
