Ingredients:
Ripe jackfruit - 2 or 3 cups sliced
Eggs - 4 Flour - 1 cup
Baking powder - 1.5 tsp
Baking soda - 1/2 tsp Salt - 1/2 tsp
Butter - 100 gm
Coconut sugar - 1/2 cup
Vanilla essence - 1 tsp
To caramelize:
Sugar - 1/2 cup (white or brown)
Water - 100 ml
Method:
Caramelize 1/2 cup sugar with water over low heat. Pour into the cake pan so that the base is coated evenly. Press chopped jackfruit evenly over the base of the pan.
Sift together flour, baking powder, baking soda and salt. Beat together butter and sugar till creamy. Whisk in eggs and vanilla essence. Add sifted ingredients and stir to form a smooth batter. Pour this batter over the jackfruit and bake for about 35-40 minutes at 180C or until a skewer comes out clean.
Let the cake cool completely, then unmould on a platter and serve with ice cream or whipping cream or even just greek yogurt.
