I love citrus and of them my absolute favourite are Blood Oranges. They are stunning and I can just keep gazing at them! They are equally delicious to cook with - not too tart and not too sweet. When you use the juice of these beauties in a glaze, they turn into a beautiful shade of pink and make for some very pretty desserts. Sharing here my recipe for a Blood Orange Upside Down Cake. Please feel free to use regular oranges. I’ve used a combination of regular and blood oranges.
Ingredients:
All purpose flour - 2 cups
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1 tsp
Oil - 1/2 cup
Sugar - 1 cup
Eggs - 3 large
Orange blossom water - 1 tsp (optional)
Vanilla essence - 1 tsp
Orange zest - 1 tsp
Buttermilk - 1 cup
To line cake pan: 2-3 oranges peeled, few tablespoons sugar to sprinkle.
Method:
Sift and keep aside all dry ingredients. In a bowl whisk together sugar, orange zest and eggs. Add oil and buttermilk. Then add essence and orange blossom water. Now mix in the flour and stir till just combined.
Peel and slice your oranges thin. Sprinkle granulated sugar at the base of your cake pan. Place oranges on top of the sugar. Pour cake batter very gently over the oranges. Take care to not shift the oranges. Cook in a 180C oven for about 30-40 minutes or until a skewer inserted comes out clean.
When out of the oven, gently loosen the cake from the sides of the pan and invert into a plate while still hot. Let cool and enjoy over a hot cuppa!
