Several years ago I was a contestant on a reality show on Mazhavil Manorama called Dhe Chef. A chef had come on the show that talked about the benefits of jackfruit and he mentioned jackfruit flour that can be used for baking.
So my mother dried raw jackfruit and ground it into flour for me and that's how I first started using it to bake. I've been using it for over 5 years now. It wasn't hard for me at all as I first baked a cake with it and never noticed the difference to be honest. I now use it in pancakes, cakes, cookies and even to make rotis and dosas.
Ingredients:
Butter - 250 grams
Sugar - 2 cups (can substitute with coconut sugar)
Eggs - 4 large
Jackfruit flour - 1 cup
Cocoa powder - 3/4 cup
Dark chocolate - 220 grams
Vanilla essence - 2 tsps
Coffee Powder - 1 tsp
Salt - 1 tsp
Chopped nuts - 1 cup
Method:
Melt butter and dark chocolate together. Once fully melted and smooth, add sugar, salt, coffee powder and vanilla essence. Mix well. Cool the mixture slightly and then add in the beaten eggs. Next, gently fold in the jackfruit flour, cocoa powder and chopped nuts. Pour into a paper-lined tin and bake at about 180C for 45 minutes or until a skewer inserted comes out fairly clean. The brownies will be rich and fudgy.
