I am not a huge seafood lover but Prawns give me some any day! I am blessed to live near the sea and have access to my favorite Prawns and at reasonable prices too.
I love cooking them in the simplest way to allow the prawns to shine. This recipe has been adapted from one of my favorite Chef - Marion Grasby. It's simple, using very few pantry ingredients and comes together very quickly.
The baking powder in the marinade is a great trick suggested by Marion to keep the prawns firm and it forms a kind of light coating over the prawns, keeping it juicy but also gives texture. Win win! There's a little video on my Instagram page in case you want to see how it's done.

Ingredients:
Prawns - 500 grams (peeled and deveined)
Marinate prawns for about 10 minutes in 1/2 tsp ginger-garlic paste, 1/2 tsp chilli & turmeric powder, 1/4 tsp baking powder, salt & pepper to taste.
Garlic cloves - 8 finely chopped
Spring onions - 4 (separate white and green parts)
Butter - 100 grams
Chilli flakes - as per preference
Dark soy sauce - 1/2 tbsp
Toasted sesame oil - 1 tbsp
Method:
Heat butter in a pan, add chopped garlic and the white part of spring onion. Stir fry for a minute. Add in the marinated prawns and cook till the prawns turn pink. Add chilli flakes, soy sauce and toss well. Garnish with spring onion greens. Turn the heat off and then drizzle sesame oil. Serve with steamed rice or noodles.
