Has the world had enough Banana Bread already?
Clearly not, because you haven't tried my Banana bread! I have to admit mine is more cake than bread but hey who says you can't have cakey bread and with chocolate in it - how can this possibly be wrong 😉
This is a simple recipe using oil (FYI I am a sucker for oil based baking recipes) and comes together very quickly. The key as always is to use over ripe bananas. When my bananas are turning rotten I just stick them in the freezer, thaw them when the craving hits and bake up a loaf of this beauty. How easy is that eh?
Ingredients:
Flour - 1 & 3/4
Baking soda - 1/2 tsp
Cinnamon powder - 1 tsp
Salt - 1/2 tsp
Eggs - 2 large
Sugar - 3/4 cup (brown or white)
Oil - 1/2 cup
Bananas mashed - 3 medium
Chopped chocolate - 1 cup
Vanilla essence - 1 tsp
Vinegar - 1/2 tsp
Method:
Sift together flour, baking soda, salt and cinnamon powder. Whisk eggs, oil and sugar. Add to this mashed bananas, vinegar and vanilla essence. Stir in sifted ingredients and bring it all together. Do not over beat. Add in half the chopped chocolate. Pour into a loaf pan - 9x5 inch pan works. Top with remaining chocolate. Bake in a 180C oven until golden brown for about 50 minutes or until a skewer inserted comes out clean.
Cool well before slicing. Slather with butter or a nut butter or even just by itself enjoy with a hot cuppa.
