Banana and Date Bread

This cake is totally refined sugar free and rightly so because the bananas and dates add such depth of flavor and richness without needing any refined sugar at all. It is a great tea time addition to a cup of tea or coffee, enjoy a slice or two of this deliciousness.

Glass of wine, basil leaves, tomatoes, dry pasta and some salt grains on a white tablecloth



Ingredients:


Bananas - 1 cup mashed

Dates - 1 cup pitted

Jackfruit flour - 1 cup

Wholewheat flour - 1/2 cup

Baking powder - 2 tsp

Baking soda - 3/4 tsp

Salt - 1 tsp

Vanilla essence - 2 tsp

Cinnamon powder - 1 tsp

Eggs - 2 large

Oil - 1/2 cup

Date syrup or Honey or Maple syrup - 1/4 cup

Nuts - 3/4 chopped



Method:


Sift flours, baking soda, baking powder, cinnamon and salt. Mix together eggs, mashed bananas, chopped dates and vanilla essence. Then add oil and honey. Next fold in the sifted ingredients. Finally mix nuts and reserve a few for sprinkling on top. Pour into a bread pan and bake in a 180C oven for about 30 minutes or until a skewer inserted comes out clean. Cool on a wire rack and enjoy sliced bread with butter.
